Happy Labor Day!

Happy Labor Day friends! Here’s to soaking up the last days of summer with those we love most. Whether you’re  staying home or spending the weekend on or near a body of water, there are many ways to celebrate the long weekend.  Since we will be outdoors (pending a rainout), we wanted to share some tasty, simple recipe ideas. Lemonade is a good crowd pleaser for all ages, so why not shake it up a bit? A refreshing cucumber mint lemonade will do just the trick-  if you’re 21+, adding a splash of your favorite vodka creates a fun adult beverage.  For an appetizer, this simple olive tapenade will hold everyone over  while you are grilling up the main course.  Before grilling chicken we recommend using Simply Balanced Italian dressing as a quick and easy marinade.  After you feast on apps and entrees finish your Labor Day meal with a colorful dessert pizza!

  4. Green Chiles
  5. Market Pantry Red Wine Vinegar found at most Target stores
  6. Pitcher
  7. Festive Bowl
  8. Lemonade Drink Mix
  9. Mason Jar Tumbler
  10. A Basket to carry it all!

Olive Tapenade 

1 small can of chopped black olives

1 small can of chopped green chiles

2 large fresh tomatoes, chopped

3 green onions, chopped

3 T olive oil

1 1/2 T Red wine vinegar

1/4 t ground black pepper

1 t salt

1 t garlic powder

2 T chopped cilantro

Mix and serve on sliced baguette or crostini and is best if stands overnight in fridge.

 

Fruit pizza

Archer Farms whole wheat pizza crust

1 c strawberries, sliced

1 c blueberries, sliced

1 c raspberries

2 kiwis, sliced

Frosting:

1 (8 oz) package of greek yogurt

2 T frozen limeade concentrate, thawed

1/2 cup powdered sugar

Mix all frosting ingredients and beat until smooth. Spread on pizza crust and place fruit on top of frosting.

Cucumber Mint Lemonade

1 stick of Market Pantry Lemonade (quart sized)

1 large handful of fresh mint

1 medium-sized cucumber

club soda

ice

cheese cloth

vodka (optional)

Mix the 2 quarts of lemonade as instructed on the package. Cut up cucumber into large chunks and place into blender with a handful of mint and 1-2 cups of the lemonade mixture. Blend until smooth, then strain mixture through cheesecloth. Save the liquids and add to a pitcher of lemonade. Mix and top with club soda and a cucumber slice!
